  • 2 lbs pork shoulder, cut into 1-inch cubes
  • 1 cup bell peppers, chopped (mixed colors)
  • 1 cup pineapple chunks (fresh or canned)
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1/2 cup brown sugar
  • 1/4 cup low-sodium soy sauce
  • 1/4 cup rice vinegar (or apple cider vinegar)
  • 1/4 cup ketchup
  • 2 tbsp cornstarch mixed with 2 tbsp water

Instructions

  1. Begin by browning the pork in a skillet over medium heat for enhanced flavor; then transfer to the slow cooker.
  2. Sauté the chopped onions in the same skillet until translucent (about 5 minutes) and add to the slow cooker.
  3. In a bowl, whisk together soy sauce, brown sugar, ketchup, garlic, rice vinegar, and a splash of pineapple juice; pour over the pork and vegetables.
  4. Cover and cook on low for 6-8 hours or high for 4 hours.
  5. About 30 minutes before serving, mix cornstarch with water and stir into the slow cooker to thicken the sauce.
