  • 8 oz whole wheat pasta
  • 1 red bell pepper, diced
  • 1 cucumber, diced
  • 3 green onions, sliced
  • 1/2 cup creamy peanut butter
  • 3 tbsp low-sodium soy sauce
  • 2 tbsp rice vinegar
  • 1 tsp chili paste or Sriracha (adjust to taste)
  • 1 tsp sesame oil
  • Fresh cilantro (optional)

Instructions

  1. Cook the pasta according to package instructions in salted boiling water until al dente. Drain and rinse under cold water.
  2. While the pasta cooks, chop the red bell pepper, cucumber, and green onions.
  3. In a small bowl, whisk together peanut butter, soy sauce, rice vinegar, chili paste or Sriracha, and sesame oil until smooth.
  4. In a large mixing bowl, combine the cooked pasta and chopped vegetables. Pour the dressing over and toss until evenly coated.
  5. If using cilantro, sprinkle it on top just before serving.
