- 8 oz whole wheat pasta
- 1 red bell pepper, diced
- 1 cucumber, diced
- 3 green onions, sliced
- 1/2 cup creamy peanut butter
- 3 tbsp low-sodium soy sauce
- 2 tbsp rice vinegar
- 1 tsp chili paste or Sriracha (adjust to taste)
- 1 tsp sesame oil
- Fresh cilantro (optional)
Instructions
- Cook the pasta according to package instructions in salted boiling water until al dente. Drain and rinse under cold water.
- While the pasta cooks, chop the red bell pepper, cucumber, and green onions.
- In a small bowl, whisk together peanut butter, soy sauce, rice vinegar, chili paste or Sriracha, and sesame oil until smooth.
- In a large mixing bowl, combine the cooked pasta and chopped vegetables. Pour the dressing over and toss until evenly coated.
- If using cilantro, sprinkle it on top just before serving.
