Description

Strawberry Cheesecake Cookies are a delightful fusion of creamy cheesecake and fresh strawberries, resulting in soft, chewy treats that are perfect for any occasion.

Ingredients

Scale
  • 1 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 2 large eggs
  • 2 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup fresh strawberries, finely chopped
  • 8 oz cream cheese, softened
  • 1 cup powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a mixing bowl, cream together softened butter, granulated sugar, and brown sugar until fluffy. Add eggs one at a time, mixing well after each addition.
  3. Stir in vanilla extract. Gradually add sifted flour mixed with baking soda and salt until just incorporated.
  4. Gently fold in chopped strawberries.
  5. Drop mounds of dough onto prepared baking sheets about 2 inches apart. Bake for 12-15 minutes until the edges are slightly golden.
  6. While cookies cool on wire racks, whip softened cream cheese and powdered sugar until creamy. Spread or drizzle over each cookie once cooled.
