Description

Strawberry Lemon Bars are a delightful dessert that perfectly balances sweet strawberries and zesty lemon.   • 1 cup fresh strawberries, chopped
  • 1/2 cup freshly squeezed lemon juice (about 23 lemons)
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 1 cup all-purpose flour
  • 1/4 cup powdered sugar (for dusting)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking dish.
  2. In a bowl, combine melted butter, granulated sugar, flour, and a pinch of salt until crumbly. Press this mixture into the bottom of the prepared dish.
  3. Bake the crust for 15 minutes until lightly golden.
  4. While the crust bakes, whisk together eggs, granulated sugar, lemon juice, and flour in another bowl until smooth. Fold in the chopped strawberries.
  5. Pour the strawberry-lemon filling over the baked crust and return it to the oven. Bake for an additional 20-25 minutes until set but slightly jiggly in the center.
  6. Allow to cool completely before dusting with powdered sugar and cutting into squares.
