  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup fresh bell peppers (mixed colors, chopped)
  • 3 cloves fresh garlic (minced)
  • 2 green onions (chopped)
  • 1/2 cup sweet chili sauce
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp sesame oil
  • 2 cups cooked rice or quinoa

Instructions

  1. Prepare your ingredients by washing and chopping chicken and vegetables into bite-sized pieces.
  2. Marinate the chicken in sweet chili sauce and soy sauce for at least 30 minutes.
  3. Heat sesame oil in a large skillet over medium heat. Add bell peppers and garlic; sauté until fragrant.
  4. Push veggies to one side of the skillet and add marinated chicken to the other side. Cook until golden brown (5-7 minutes).
  5. Pour remaining sweet chili sauce over chicken and veggies, stirring well. Simmer until heated through.
