- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 1 cup fresh bell peppers (mixed colors, chopped)
- 3 cloves fresh garlic (minced)
- 2 green onions (chopped)
- 1/2 cup sweet chili sauce
- 2 tbsp low-sodium soy sauce
- 1 tbsp sesame oil
- 2 cups cooked rice or quinoa
Instructions
- Prepare your ingredients by washing and chopping chicken and vegetables into bite-sized pieces.
- Marinate the chicken in sweet chili sauce and soy sauce for at least 30 minutes.
- Heat sesame oil in a large skillet over medium heat. Add bell peppers and garlic; sauté until fragrant.
