- 3/4 cup granulated sugar
- 2 tsp baking powder
- 1 tsp ground cinnamon

- 2 large eggs (room temperature)
- 1/2 cup whole milk (or almond milk)
- 1 tsp vanilla extract
- 1/2 cup powdered sugar for glaze (optional)
Instructions
- Preheat oven to 400°F (200°C). Roast sweet potatoes on a baking sheet for about 45 minutes until tender. Let cool before peeling and mashing.
- In a bowl, combine the mashed sweet potatoes, sugar, eggs, milk, and vanilla until smooth.
- In another bowl, whisk together flour, baking powder, cinnamon, and nutmeg. Gradually fold the dry mix into the wet ingredients until just combined.
- Grease a donut pan and fill each cavity halfway with batter.
- Bake for 12-15 minutes or until golden brown; a toothpick should come out clean.
- Allow cooling in the pan for 5 minutes before transferring to wire racks. For glaze, mix powdered sugar with milk until smooth and drizzle over cooled donuts.
