Ingredients
Scale
- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 16 oz cream cheese, softened
- 1 cup pumpkin puree
- 1 cup granulated sugar
- 3 large eggs, room temperature
- 2 tsp ground cinnamon
- ½ tsp ground nutmeg
- 2 tsp vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking pan or line it with parchment paper.
- In a medium bowl, combine graham cracker crumbs and melted butter. Press the mixture into the bottom of the prepared pan.
- In another bowl, beat the cream cheese until smooth. Gradually mix in sugar, then add eggs one at a time until fluffy.
- Divide the mixture in half; stir pumpkin puree, cinnamon, nutmeg, and vanilla into one half.
- Pour both mixtures over the crust—start with the cream cheese layer and dollop pumpkin mixture on top. Use a knife to swirl gently.
- Bake for 40-45 minutes until slightly jiggly in the center. Cool completely before slicing into bars.
