  • 6 cups stale bread cubes
  • 2 cups low-sodium vegetable broth
  • ½ cup butter
  • 1 large onion, finely chopped
  • 2 stalks celery, diced
  • 1 lb Italian sausage (optional)
  • 1 tsp dried sage
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 2 large eggs, beaten
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 350°F (175°C). Spread stale bread cubes on a baking sheet and toast until golden brown.
  2. In a skillet over medium heat, melt butter. Sauté the onions and celery until soft, about 5 minutes.
  3. If adding sausage, crumble it in now and cook until browned. Stir in the dried herbs for an additional minute.
  4. In a large bowl, mix together the toasted bread cubes with the sautéed mixture. Gradually drizzle in vegetable broth until moist but not soggy.
  5. Gently fold in beaten eggs along with salt and pepper.
  6. Transfer to a greased baking dish, cover with foil, and bake for 25 minutes. Remove foil and bake for an additional 10-15 minutes until the top is golden brown.
