  • 4 oz pancetta, diced
  • 2 large eggs
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 1 tsp freshly cracked black pepper
  • 2 cloves garlic, minced
  • Salt (to taste)

Instructions

  1. Cook the tortellini in a large pot of salted boiling water according to package instructions until al dente (about 3-4 minutes). Drain, reserving some pasta water.
  2. In a large skillet over medium heat, sauté the diced pancetta until crispy. Add minced garlic and cook until fragrant.
  3. In a bowl, whisk together eggs, heavy cream, and Parmesan until smooth.
  4. Add the hot tortellini to the skillet with pancetta and garlic. Quickly pour in the egg mixture while stirring to create a silky sauce.
  5. Season with black pepper and adjust the consistency with reserved pasta water if needed. Serve immediately with extra Parmesan on top.
