  • 2 medium zucchinis (about 500g)
  • 1 cup all-purpose flour
  • 2 large eggs
  • 3 cloves garlic, minced
  • ½ cup grated Parmesan cheese
  • ¼ cup fresh herbs (parsley or dill), chopped
  • 1 tsp salt
  • ½ tsp black pepper
  • 4 tbsp olive oil (for frying)

Instructions

  1. Grate the zucchinis and sprinkle with salt. Let sit for 10 minutes to drain excess moisture.
  2. In a bowl, whisk together eggs, flour, garlic, Parmesan cheese, herbs, pepper until well combined.
  3. Squeeze excess moisture from the zucchini and fold it into the egg mixture.
  4. Heat olive oil in a nonstick skillet over medium heat.
  5. Drop spoonfuls of batter into the skillet and flatten slightly with a spatula.
  6. Fry for about 3-4 minutes per side until golden brown and crispy. Transfer to paper towels to drain excess oil.
