Ingredients

  • 1 cup dried red kidney beans
  • 12 oz smoked Andouille sausage
  • 1 medium onion
  • 1 green bell pepper
  • 2 celery stalks
  • 4 cloves garlic
  • 1 tsp cayenne pepper (adjust to taste)
  • 2 bay leaves
  • 4 cups low-sodium chicken broth
  • 2 cups white rice

Instructions

  1. Soak the dried kidney beans in water overnight.
  2. In a large pot, heat olive oil over medium heat. Sauté chopped onion, bell pepper, celery, and minced garlic until translucent (about 5 minutes).
  3. Add sliced sausage and cook until slightly browned.
  4. Stir in cayenne pepper, bay leaves, salt, and soaked beans.
  5. Pour in chicken broth to cover the mixture and bring to a boil. Reduce heat to simmer for 1 to 1.5 hours until the beans are tender.
  6. Serve hot over fluffy white rice.
