- 12 oz smoked Andouille sausage
- 1 medium onion
- 1 green bell pepper

- 4 cloves garlic

- 4 cups low-sodium chicken broth
- 2 cups white rice
Instructions
- Soak the dried kidney beans in water overnight.
- In a large pot, heat olive oil over medium heat. Sauté chopped onion, bell pepper, celery, and minced garlic until translucent (about 5 minutes).
- Add sliced sausage and cook until slightly browned.
- Stir in cayenne pepper, bay leaves, salt, and soaked beans.
- Pour in chicken broth to cover the mixture and bring to a boil. Reduce heat to simmer for 1 to 1.5 hours until the beans are tender.
- Serve hot over fluffy white rice.
