  • 1 ½ cups all-purpose flour
  • 1 tsp baking soda
  • 1 cup granulated sugar
  • ½ cup unsalted butter (softened)
  • 2 large eggs (room temperature)
  • 1 tsp vanilla extract
  • 2 cups powdered sugar
  • 1 cup marshmallow fluff

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, whisk together cocoa powder, flour, baking soda, and salt.
  3. In another bowl, cream softened butter and granulated sugar until light and fluffy. Add eggs one at a time along with vanilla extract.
  4. Gradually mix the dry ingredients into the wet mixture until just combined.
  5. Scoop tablespoons of batter onto prepared sheets spaced two inches apart. Bake for 10–12 minutes until puffed and springy.
  6. Cool on baking sheets for five minutes before transferring to wire racks.
  7. For the filling, beat powdered sugar, marshmallow fluff, and vanilla extract until fluffy.
  8. Assemble by spreading filling between two cooled cookie halves.
