Ingredients

  • 2 cups sushi rice
  • 2 cups water
  • 1/4 cup sushi vinegar
  • 4 sheets nori
  • 1/2 cup imitation crab meat (shredded)
  • 1/2 cucumber (cut into thin strips)
  • 1/2 avocado (sliced)
  • Wasabi and soy sauce (for serving)

Instructions

  1. Rinse sushi rice under cold water until clear. Cook with water in a rice cooker or pot until fluffy.
  2. Transfer warm rice to a bowl, gently mix in sushi vinegar, and let cool.
  3. Slice cucumber and avocado into thin strips.
  4. On a bamboo sushi mat, lay one nori sheet shiny side down. Spread an even layer of rice over it, leaving an inch at the top.
  5. Place cucumber, avocado, and crab on the rice.
  6. Roll tightly from the bottom using the mat as a guide. Seal edge with water.
  7. Slice with a sharp knife dipped in water into bite-sized pieces and serve with soy sauce and wasabi.
