Ingredients

Scale
  • 1 cup fresh lemon juice (about 46 lemons)
  • 1 cup granulated sugar
  • 1 cup water
  • 1 cup fresh basil leaves
  • 1/2 cup pineapple juice (optional)

Instructions

  1. Wash all fresh ingredients thoroughly. Zest two lemons and juice them to obtain one cup of juice.
  2. In a saucepan over medium heat, combine sugar and water until dissolved. Stir in lemon zest and torn basil leaves; simmer until fragrant, about 5 minutes.
  3. Strain the syrup mixture through a fine mesh sieve to remove seeds and pulp. Add lemon juice and pineapple juice (if using); mix well.
  4. Chill the mixture in the fridge for about an hour.
  5. Pour the chilled mixture into an ice cream maker and churn according to manufacturer instructions until it reaches a soft serve consistency (approximately 20 minutes).
