  • 8 oz rotini pasta
  • 2 fresh limes (zest and juice)
  • 1 cup cherry tomatoes (halved)
  • 1 medium cucumber (diced)
  • ¼ cup red onion (sliced)
  • ¼ cup fresh cilantro (chopped)
  • ¼ cup extra virgin olive oil
  • Salt and pepper to taste
  • 1 tsp garlic powder

Instructions

  1. 1. Preheat grill or stovetop pan to medium-high heat. Season chicken breasts with salt, pepper, and garlic powder. Grill for about 6 minutes per side until golden brown and cooked through.
