Description

Shrimp & Avocado Citrus Salad is a refreshing blend of juicy shrimp, creamy avocado, and zesty citrus, perfect for summer gatherings or light meals.


Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 2 ripe avocados, diced
  • 1 cup orange segments (about 2 oranges)
  • 1 cup grapefruit segments (about 1 grapefruit)
  • 2 tbsp freshly squeezed lime juice
  • 1/4 red onion, thinly sliced
  • 1/4 cup fresh cilantro, chopped
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Rinse shrimp under cold water and pat dry. Marinate in lime juice, salt, and pepper for 15 minutes.
  2. Heat olive oil in a skillet over medium-high heat. Sauté marinated shrimp until pink (3-4 minutes). Allow to cool.
  3. Peel and segment oranges and grapefruits; add to a mixing bowl.
  4. Add diced avocados and sliced red onion to the bowl.
  5. Once cooled, add shrimp to the bowl along with chopped cilantro.
  6. Drizzle with olive oil and toss gently. Adjust seasoning as needed before serving.
