Shrimp & Avocado Citrus Salad is a refreshing blend of juicy shrimp, creamy avocado, and zesty citrus, perfect for summer gatherings or light meals.

- 1 lb large shrimp, peeled and deveined
- 2 ripe avocados, diced
- 1 cup orange segments (about 2 oranges)
- 1 cup grapefruit segments (about 1 grapefruit)
- 2 tbsp freshly squeezed lime juice
- 1/4 red onion, thinly sliced
- 1/4 cup fresh cilantro, chopped
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Rinse shrimp under cold water and pat dry. Marinate in lime juice, salt, and pepper for 15 minutes.
- Heat olive oil in a skillet over medium-high heat. Sauté marinated shrimp until pink (3-4 minutes). Allow to cool.
- Peel and segment oranges and grapefruits; add to a mixing bowl.
- Add diced avocados and sliced red onion to the bowl.
- Once cooled, add shrimp to the bowl along with chopped cilantro.
- Drizzle with olive oil and toss gently. Adjust seasoning as needed before serving.
