Ingredients

  • 8 oz rotini or penne pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1 cup bell peppers, thinly sliced
  • 1/2 cup red onion, thinly sliced
  • 1/2 cup pitted black olives
  • 1/4 cup fresh basil leaves, torn
  • 1/2 cup Italian dressing
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Cook the pasta in boiling salted water according to package instructions until al dente. Drain and rinse under cold water.
  2. In a large mixing bowl, combine the halved cherry tomatoes, diced cucumber, sliced bell peppers, and red onion.
  3. Add the cooled pasta, black olives, and torn basil leaves to the vegetable mix. Gently toss to combine.
  4. Drizzle your preferred Italian dressing over the salad and sprinkle with grated Parmesan cheese. Toss lightly to coat all ingredients evenly.
  5. Cover and refrigerate for at least 30 minutes before serving to allow flavors to meld.
