  • 4 salmon fillets (6 oz each)
  • 3 tbsp white or yellow miso paste
  • 2 tbsp unsalted butter (softened)
  • 4 scallions (sliced)
  • 1/2 cup fresh parsley (chopped)
  • 1/4 cup fresh cilantro (chopped)
  • Juice of 1 lemon
  • 3 tbsp extra virgin olive oil
  • Salt to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix miso paste and softened butter until smooth; generously spread over the skin-side of salmon fillets.
  3. Marinate salmon on a parchment-lined baking sheet for at least 20 minutes.
  4. In a skillet, heat olive oil over medium heat, add scallions, and sauté until golden and crispy (3–5 minutes).
  5. Combine crispy scallions with parsley, cilantro, lemon juice, and remaining olive oil in a bowl to create salsa verde.
  6. Bake marinated salmon for 12–15 minutes until flaky but moist.
  7. Serve topped with sizzled scallion salsa verde.
