- 1.5 lbs baby potatoes, halved
- 4 cloves garlic, minced
- 4 tbsp unsalted butter, divided
- 1 cup low-sodium beef broth
- 2 tbsp Worcestershire sauce
- 2 tsp Italian seasoning
- Salt and pepper to taste
Instructions
- In a skillet, melt 2 tbsp butter over medium heat. Add minced garlic and sauté for 30 seconds until fragrant.
- Place chopped beef and halved baby potatoes in the slow cooker. Pour sautéed garlic mixture over them.
- Add beef broth, Worcestershire sauce, Italian seasoning, salt, and pepper. Stir to combine.
- Cook on low for 6-8 hours or high for 4 hours until beef is fork-tender.
- Stir in remaining butter 15 minutes before serving to enrich the sauce.
- Serve warm, garnished with fresh parsley if desired.
