  • 34 boneless skinless chicken breasts
  • 4 cups fresh spinach
  • 1 can (14 oz) canned artichokes, drained and chopped
  • 8 oz cream cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 3 garlic cloves, minced
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté until fragrant.
  3. Stir in fresh spinach and cook until wilted, about 2 minutes. Lower heat and mix in cream cheese until melted, followed by chopped artichokes, salt, and pepper until well combined.
  4. Season chicken breasts with salt and pepper. Place them in a greased baking dish.
  5. Spoon the spinach-artichoke mixture over each chicken breast. Top generously with shredded mozzarella and Parmesan cheese.
  6. Bake uncovered for 25-30 minutes or until the chicken reaches an internal temperature of 165°F (75°C) and cheese is bubbly.
