- 3–4 boneless skinless chicken breasts
- 4 cups fresh spinach
- 1 can (14 oz) canned artichokes, drained and chopped
- 8 oz cream cheese
- 1 cup shredded mozzarella cheese
- ½ cup grated Parmesan cheese
- 3 garlic cloves, minced
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté until fragrant.
- Stir in fresh spinach and cook until wilted, about 2 minutes. Lower heat and mix in cream cheese until melted, followed by chopped artichokes, salt, and pepper until well combined.
- Season chicken breasts with salt and pepper. Place them in a greased baking dish.
- Spoon the spinach-artichoke mixture over each chicken breast. Top generously with shredded mozzarella and Parmesan cheese.
- Bake uncovered for 25-30 minutes or until the chicken reaches an internal temperature of 165°F (75°C) and cheese is bubbly.
