Ingredients

  • 1 French baguette
  • 8 oz fresh mozzarella
  • 12 ripe cherry tomatoes
  • ¼ cup fresh basil leaves
  • 2 tbsp balsamic glaze
  • 2 tbsp extra virgin olive oil
  • 4 black olives (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Slice the baguette into half-inch rounds and arrange on a baking sheet. Drizzle with olive oil and toast for about 8 minutes until golden brown.
  2. While cooling, slice mozzarella into thick rounds. Halve cherry tomatoes and place one half on each mozzarella slice.
  3. Add basil leaves above each cheese-tomato stack as 'hats.'
  4. Drizzle balsamic glaze over the crostini for added flavor.
  5. For an optional spooky touch, cut black olives into small pieces and place them on tomato halves as eyes.
