  • 4 medium orange or green bell peppers
  • 1 lb ground turkey or beef
  • 1 cup cooked rice (white or brown)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup shredded cheddar cheese
  • 1 tsp Italian seasoning or taco seasoning
  • 1 cup low-sodium tomato sauce

Instructions

  1. Preheat oven to 375°F (190°C). Cut off the tops of the bell peppers and scoop out the seeds.
  2. In a skillet over medium heat, sauté chopped onion and minced garlic until golden.
  3. In a large bowl, mix together cooked rice, ground meat, tomato sauce, shredded cheese, and spices.
  4. Stuff each pepper with the meat mixture tightly to maintain their shape.
  5. Place stuffed peppers in a baking dish with an inch of water. Bake for 30–35 minutes until tender and lightly browned.
  6. If desired, sprinkle more cheese on top before returning them to the oven for about 5 minutes until melted.
