- 4 medium orange or green bell peppers
- 1 lb ground turkey or beef
- 1 cup cooked rice (white or brown)
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 cup shredded cheddar cheese
- 1 tsp Italian seasoning or taco seasoning
- 1 cup low-sodium tomato sauce
Instructions
- Preheat oven to 375°F (190°C). Cut off the tops of the bell peppers and scoop out the seeds.
- In a skillet over medium heat, sauté chopped onion and minced garlic until golden.
- In a large bowl, mix together cooked rice, ground meat, tomato sauce, shredded cheese, and spices.
- Stuff each pepper with the meat mixture tightly to maintain their shape.
- Place stuffed peppers in a baking dish with an inch of water. Bake for 30–35 minutes until tender and lightly browned.
- If desired, sprinkle more cheese on top before returning them to the oven for about 5 minutes until melted.
