Instructions
- Boil water in a large pot; add salt and cook pasta according to package instructions until al dente. Reserve 1/2 cup pasta water before draining.
- In a skillet over medium heat, warm olive oil. Sauté minced garlic and halved cherry tomatoes until fragrant and soft.
- Add fresh spinach to the skillet, stirring until wilted. Season with salt and pepper.
- Combine drained pasta with the vegetable mixture in the skillet; toss to mix well.
- Remove from heat and sprinkle grated Parmesan cheese over the dish. If desired, add reserved pasta water for creaminess.
