- 4 medium bell peppers (red, yellow, or orange)
- 2 cups cooked shredded chicken (preferably rotisserie)
- 1 cup cooked rice
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 cup cheddar cheese, grated
- 1 tsp cumin
- 1 tsp paprika
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Slice the tops off the bell peppers and remove seeds. Place them upright in a baking dish.
- In a skillet over medium heat, sauté chopped onions in olive oil until translucent (about 5 minutes), then add minced garlic and cook for another minute.
- In a bowl, combine shredded chicken, cooked rice, sautéed onions and garlic, cumin, paprika, salt, pepper, and half of the cheddar cheese; mix well.
- Stuff each pepper with the mixture and top with remaining cheddar cheese.
- Cover with foil and bake for 25 minutes; remove foil and bake an additional 10-15 minutes until cheese is bubbly and golden brown.
