- 2 tbsp taco seasoning
- 1 can (14 oz) diced tomatoes with green chilies
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup diced bell peppers (mixed colors)
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 2 green onions, chopped
- Fresh cilantro (optional)
Instructions
- Prepare your ingredients by chopping the bell peppers and green onions.
- In a medium pot, boil 2 cups of water. Add the rice, cover, reduce heat, and simmer for 15-20 minutes until tender.
