Ingredients
Scale
- 3 cups cooked jasmine rice (preferably day-old)
- 1 cup pineapple chunks (fresh or canned)
- 4 green onions (finely chopped)
- 1 cup bell peppers (assorted colors, diced)
- 1 cup frozen peas and carrots (thawed)
- 2 large eggs (beaten)
- 3 tbsp low-sodium soy sauce
- 2 tsp sesame oil
- 3 garlic cloves (minced)
Instructions
- Gather and prep all ingredients: chop vegetables, measure rice, and have everything ready for quick assembly.
- In a large skillet or wok, heat a splash of oil over medium heat. Scramble the beaten eggs until cooked, then set aside.
- In the same skillet, add more oil if needed. Sauté minced garlic until fragrant (about 30 seconds), then add bell peppers and cook until softened.
- Fold in the cooked jasmine rice and pineapple chunks, stirring until heated through to meld flavors.
- Drizzle soy sauce and sesame oil over the mixture, tossing well to coat each grain of rice evenly.
- Add chopped green onions along with thawed peas and carrots; stir until warm throughout. Serve hot!
