Ingredients

  • 2 cups cauliflower florets
  • 1 cup quinoa
  • 1 can (15 oz) black beans, rinsed
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime
  • 1 avocado, sliced
  • 2 tsp olive oil
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Toss cauliflower florets with olive oil, cumin, chili powder, salt, and pepper. Spread on a parchment-lined baking sheet.
  3. Roast cauliflower for 25-30 minutes until golden brown.
  4. In a saucepan, combine rinsed quinoa with 2 cups water; bring to boil and simmer for about 15 minutes until fluffy.
  5. In a large bowl, mix roasted cauliflower with cooked quinoa, black beans, chopped cilantro, and lime juice.
  6. Serve topped with sliced avocado and additional cilantro if desired.
