  • 1 can (14.5 oz) fire-roasted diced tomatoes
  • 1 can (15 oz) kidney beans, rinsed
  • 2 tbsp chili powder (adjust to taste)
  • 1 tsp ground cumin
  • 2 cups low-sodium beef broth
  • 1 cup bell peppers, chopped (any color)
  • 1 tbsp olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat. Add chopped onions and bell peppers; sauté until softened.
  2. Stir in minced garlic until fragrant. Add ground beef and cook until browned, breaking it apart with a wooden spoon.
