  • 1 cup green or brown lentils
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 1 cup grated carrots
  • 1 cup diced bell peppers (any color)
  • 1 cup whole wheat or gluten-free breadcrumbs
  • 1 cup low-sodium vegetable broth
  • 2 tsp dried oregano
  • 2 tsp dried thyme
  • 1 tsp smoked paprika
  • ½ cup ketchup or BBQ sauce

Instructions

  1. Rinse lentils under cold water until clear. Boil in vegetable broth for about 20 minutes until tender but firm.
  2. In a skillet over medium heat, sauté chopped onions and garlic in olive oil until fragrant (about 5 minutes).
  3. Stir in grated carrots and diced bell peppers; cook for an additional 5 minutes until softened.
  4. In a large bowl, combine cooked lentils with sautéed vegetables. Mash gently while leaving some chunks for texture.
  5. Mix in breadcrumbs and spices until well combined.
  6. Preheat oven to 350°F (175°C). Transfer mixture to a greased loaf pan and spread ketchup or BBQ sauce on top. Bake for 45 minutes or until golden brown.
