- 2 tsp dried oregano
- 2 tsp dried thyme
- 1 tsp smoked paprika
- ½ cup ketchup or BBQ sauce
Instructions
- Rinse lentils under cold water until clear. Boil in vegetable broth for about 20 minutes until tender but firm.
- In a skillet over medium heat, sauté chopped onions and garlic in olive oil until fragrant (about 5 minutes).
- Stir in grated carrots and diced bell peppers; cook for an additional 5 minutes until softened.
- In a large bowl, combine cooked lentils with sautéed vegetables. Mash gently while leaving some chunks for texture.
- Mix in breadcrumbs and spices until well combined.
- Preheat oven to 350°F (175°C). Transfer mixture to a greased loaf pan and spread ketchup or BBQ sauce on top. Bake for 45 minutes or until golden brown.
