  • 2 cups frozen hash browns
  • 2 cups shredded sharp cheddar cheese
  • 4 large eggs
  • 1 cup whole milk
  • 1 small onion, diced
  • 1 bell pepper, diced (any color)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet over medium heat, cook the sausage until browned and crumbly.
  3. Add the diced onion and bell pepper to the skillet and sauté until softened.
  4. In a large bowl, combine the cooked sausage mixture with hash browns, eggs, milk, salt, pepper, and garlic powder. Mix well.
  5. Fold in half of the shredded cheddar cheese.
  6. Transfer the mixture to a greased baking dish and top with remaining cheese.
  7. Bake for 45 minutes or until bubbly and golden brown.
