Ingredients

  • 1 medium English cucumber, thinly sliced
  • 1 ripe avocado, diced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh basil, chopped
  • 2 tablespoons lemon juice (freshly squeezed)
  • 1/2 cup Greek yogurt (full-fat)
  • 3 tablespoons extra virgin olive oil

Instructions

  1. Rinse the mixed greens under cold water and dry thoroughly in a salad spinner.
  2. Slice the cucumber and dice the avocado into bite-sized pieces.
