Description
A warm and creamy chicken salad with a crunchy potato chip topping, baked until golden and bubbly.
Ingredients
Scale
- 2 cups (about 10 oz / 280g) cooked chicken, cubed
- 1 cup (110g) finely chopped celery
- 1 cup soft bread cubes (from about 2 slices)
- 1 cup (225g) mayonnaise
- ½ cup (55g) slivered almonds, toasted
- 2 tablespoons (30ml) fresh lemon juice
- 2 teaspoons finely grated yellow onion
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ½ cup (55g) grated sharp cheddar cheese
- 1 cup (about 2 oz / 55g) crushed potato chips
Instructions
- Preheat your oven to 450°F (230°C). Lightly grease a 1.5-quart baking dish or six 8-ounce ramekins.
- In a large bowl, add the cooked chicken, chopped celery, bread cubes, mayonnaise, toasted almonds, lemon juice, grated onion, salt, and pepper.
- Stir everything together until it is evenly combined.
- Spoon the chicken mixture into your prepared baking dish or divide it evenly among the ramekins. Spread it into an even layer.
- In a small bowl, toss the grated cheddar cheese and crushed potato chips together.
- Sprinkle the cheese and chip mixture evenly over the top of the chicken salad.
- Bake for 10 to 15 minutes, or until the filling is hot and bubbly and the topping is golden brown. A thermometer inserted into the center should read at least 165°F (74°C).
- Let the dish cool for a few minutes before serving. It is best enjoyed warm.
Notes
- Food Safety: For any dish containing poultry, ensure it is cooked to a safe minimum internal temperature of 165°F (74°C) as measured by a food thermometer.
- A store-bought rotisserie chicken is a convenient option for the cooked chicken. You will need about half of a standard-sized chicken.
- To toast the almonds, place them in a dry skillet over medium heat and stir frequently for 3-5 minutes, until fragrant and lightly browned.
- Plain, sturdy potato chips with ruffles hold up well, but kettle-cooked or cheddar-flavored chips are also good options.
