This dish is straightforward to prepare and takes about 35 minutes from start to finish. It is a great choice for a holiday meal or just to make a weeknight dinner feel a little more special.

Why You'll Love This Recipe

  • Browning the butter is key
  • This simple step cooks the milk solids in the butter until they are toasted and nutty, adding a layer of savory depth
  • Boiling the potatoes until very tender ensures they mash easily into a smooth, lump-free consistency
  • Warming the milk before adding it helps keep the potatoes hot and allows them to absorb the liquid more easily for a creamier result

Essential Ingredients

  • Sweet Potatoes: Look for varieties like Garnet or Jewel. They have orange flesh and are great for mashing.
  • Butter: Unsalted butter is best so you can control the final saltiness of the dish. If you only have salted, reduce the added salt.
  • Milk: Whole milk provides richness, but you can use 2% milk or a plant-based alternative like oat or almond milk.
  • Vanilla Extract: This adds a subtle warmth that enhances the sweet potato flavor. Use pure vanilla extract for the best taste.

Let’s Make it together

Boil the Sweet Potatoes: Place the peeled and cubed sweet potatoes in a large pot. Cover them with cold water, bring to a boil, and cook until the potatoes are very soft and can be easily pierced with a fork. Drain them well.

Brown the Butter: Return the empty pot to the stove over medium-low heat. Add the butter and cook, swirling often, until the butter foams and brown specks appear at the bottom. It will smell nutty and fragrant.

Mash and Combine: Turn off the heat and add the hot, drained potatoes back to the pot with the brown butter. Mash everything together until mostly smooth. Stir in the warm milk, vanilla, salt, and pepper until you reach your desired consistency.

You Must Know

  • For extra smooth potatoes, pass them through a potato ricer or food mill before adding the other ingredients
  • Watch the butter carefully as it browns because it can turn from nutty to burnt very quickly
  • Swirl the pan constantly for even cooking
  • Warming the milk is an important step
  • Adding cold milk can cool down the potatoes and may result in a gummy texture
  • Feel free to add other warm spices like a pinch of cinnamon or nutmeg along with the salt and pepper

Serving Ideas

These mashed sweet potatoes are a wonderful side for roasted chicken, pork chops, or a holiday turkey. The nutty sweetness pairs well with savory main courses.

Storing & Reheating

Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat gently on the stovetop or in the microwave, adding a splash of milk to loosen them up. We do not recommend freezing, as it can change the texture.

FAQ

Can I make these mashed sweet potatoes ahead of time?

Yes, you can prepare them up to 2 days in advance. Store them in an airtight container in the refrigerator and reheat on the stovetop over low heat, adding a splash of milk to restore creaminess.

What’s the best tool for mashing?

A standard potato masher works well for a classic texture. For a very smooth finish, use a potato ricer before mixing in the liquids. Avoid using a food processor or blender, as it can make the potatoes gluey.

Can I use a different kind of potato?

This recipe is designed for orange-fleshed sweet potatoes. While you could use other potatoes like Yukon Gold, the flavor profile and cooking time will be different, and you will lose the characteristic sweetness.

Brown Butter Mashed Sweet Potatoes

  • Author: Emma Taylor
  • Total Time: 35 minutes
  • Yield: 6 servings 1x

Description

Tender sweet potatoes are mashed with nutty brown butter, milk, and a hint of vanilla for a flavorful side dish.

Ingredients

Scale
  • 3 lbs (1.4 kg) sweet potatoes, peeled and cut into 1-inch cubes
  • 1/2 cup (113 g) unsalted butter
  • 1/2 to 1 cup (120 to 240 ml) whole milk, warmed
  • 1 tsp vanilla extract
  • 1/2 tsp kosher salt, plus more to taste
  • 1/4 tsp black pepper, plus more to taste

Instructions

  1. Place the cubed sweet potatoes in a large pot and cover with about 1 inch of cold water.
  2. Bring to a boil over high heat. Reduce heat to maintain a steady simmer and cook for 15-20 minutes, or until the potatoes are very soft when pierced with a fork.
  3. While the potatoes cook, warm the milk in a small saucepan or in the microwave. Keep it warm.
  4. Drain the cooked potatoes well and return the empty pot to the stove over medium-low heat.
  5. Add the butter and cook, swirling the pan frequently, until the butter melts, foams, and then develops nutty-smelling brown flecks, about 3-5 minutes.
  6. Turn off the heat. Immediately return the drained, hot sweet potatoes to the pot with the brown butter.
  7. Mash the potatoes thoroughly with a potato masher.
  8. Pour in 1/2 cup of the warmed milk, the vanilla extract, salt, and pepper. Continue to mash and stir until the liquid is incorporated and the potatoes are smooth.
  9. Add more warm milk as needed to reach your desired creaminess. Taste and adjust seasoning before serving.
