Using pre-cooked chestnuts makes this recipe come together in about 40 minutes. The method is straightforward: just simmer the ingredients until tender, then blend everything into a velvety soup. It’s a great way to enjoy the unique flavor of chestnuts.

Why You'll Love This Recipe

  • Using pre-cooked, vacuum-packed chestnuts is a key shortcut
  • It saves you the time-consuming step of roasting and peeling them yourself
  • Blending the soup is essential for its signature texture
  • An immersion blender makes this step very easy, but a standard blender works just as well
  • Finishing with a splash of heavy cream and sherry at the end adds richness and a touch of complexity without overpowering the delicate chestnut flavor

Essential Ingredients

  • Chestnuts: Look for pre-cooked and peeled chestnuts, usually found in a vacuum-sealed pack or a jar. They are ready to use right out of the package.
  • Heavy Cream: This gives the soup its creamy finish. For a lighter version, you can use half-and-half. For a dairy-free option, full-fat oat milk is a good substitute.
  • Dry Sherry: This adds a nice depth of flavor. If you don’t have it, you can use a dry white cooking wine or simply leave it out.
  • Vegetable Broth: Using a low-sodium broth allows you to control the final saltiness of the soup. Chicken broth can also be used if you prefer.

Let’s Make it together

Sauté the Aromatics: Start by melting butter in a large pot. Add the chopped onion and celery and cook them over medium heat until they are soft and fragrant. This creates the flavor base for the soup.

Simmer the Soup: Next, add the chestnuts, vegetable broth, and basil to the pot. Bring everything to a boil, then lower the heat and let it simmer gently for about 20 minutes. This step makes the chestnuts very soft and allows the flavors to meld.

Blend and Finish: Once simmered, carefully blend the soup until it’s completely smooth. Return the puréed soup to the pot and stir in the heavy cream, sherry, salt, and pepper. Warm it through gently, then it’s ready to serve.

You Must Know

  • When blending hot liquids, never fill the blender more than halfway
  • Remove the center cap from the lid and cover the opening with a folded kitchen towel to allow steam to escape
  • For a thinner soup, add a bit more vegetable broth until you reach your desired consistency
  • For a thicker soup, simmer it a little longer before blending
  • To make this recipe dairy-free, use olive oil instead of butter and a full-fat oat milk or cashew cream in place of the heavy cream

Serving Ideas

This soup is wonderful served with warm, crusty bread for dipping or a simple side salad.

Storing & Reheating

Store leftover soup in an airtight container in the refrigerator for up to 4 days. You can also freeze it for up to 3 months. Thaw overnight in the refrigerator and reheat gently on the stovetop, stirring occasionally. You may need to add a splash of broth or water to adjust the consistency.

FAQ

Can I use fresh chestnuts?

Yes, but you will need to roast and peel them first. Score each chestnut, roast at 400°F (200°C) for 15-20 minutes, and peel while they are still warm. This will add significant prep time.

Can I make this soup ahead of time?

Absolutely. The soup’s flavor deepens as it sits. You can prepare it a day or two in advance. Store it in the fridge and reheat gently on the stove before serving.

My soup isn’t very smooth. What can I do?

For the smoothest texture, use a high-powered blender and blend for a full minute or two. If you still find it’s not smooth enough, you can strain the soup through a fine-mesh sieve.

Creamy Chestnut Soup

  • Author: Emma Taylor
  • Total Time: 40 minutes
  • Yield: 4 servings 1x

Description

Warm and velvety, this soup features roasted chestnuts, sautéed aromatics, and a touch of cream, all blended until perfectly smooth.

Ingredients

Scale
  • 1 tbsp unsalted butter (14g)
  • 1 medium yellow onion, chopped
  • 2 celery stalks, chopped
  • 1 (5-ounce / 140g) package pre-cooked, peeled chestnuts
  • 4 cups (960 ml) vegetable broth
  • 1/2 tsp dried basil
  • 1/2 cup (120 ml) heavy cream
  • 2 tsp dry sherry or white cooking wine
  • 1/2 tsp salt, or to taste
  • 1/4 tsp black pepper, or to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. Melt the butter in a large pot or Dutch oven over medium heat. Add the chopped onion and celery and cook, stirring occasionally, until softened, about 5 to 7 minutes.
  2. Add the pre-cooked chestnuts, vegetable broth, and dried basil to the pot. Stir to combine.
  3. Increase the heat to bring the soup to a boil, then reduce the heat to low. Cover the pot and let it simmer for 20 minutes, or until the chestnuts are very tender.
  4. Carefully transfer the soup to a blender. You may need to do this in batches. Blend until the soup is completely smooth. Alternatively, use an immersion blender directly in the pot.
  5. Return the blended soup to the pot over low heat. Stir in the heavy cream, dry sherry, salt, and pepper.
  6. Heat the soup gently for another 2 to 3 minutes until it is warmed through. Do not let it boil after adding the cream.
  7. Taste and adjust seasoning with more salt and pepper if needed.
  8. Ladle the soup into bowls and garnish with fresh chopped parsley before serving.
