- 2 tbsp vegetable oil
- 3 cloves fresh garlic, minced
- 1 medium onion, diced
- 1 cup mixed vegetables (peas, carrots, bell peppers)
- 3 tbsp low-sodium soy sauce
- 2 large eggs, beaten
- 2 green onions, chopped
- 1 cup protein (chicken, shrimp, or tofu)
Instructions
- Preheat your Blackstone griddle over medium-high heat.
- Add vegetable oil and sauté minced garlic and diced onions until fragrant (about 2 minutes).
- Toss in the mixed vegetables and stir-fry until tender-crisp (about 3-4 minutes).
- Add the cooked rice and soy sauce; mix thoroughly to coat each grain.
- Push rice to one side of the griddle. Pour in beaten eggs and scramble until fully cooked before mixing back into the rice.
