Ingredients

  • 2 tbsp vegetable oil
  • 3 cloves fresh garlic, minced
  • 1 medium onion, diced
  • 1 cup mixed vegetables (peas, carrots, bell peppers)
  • 3 tbsp low-sodium soy sauce
  • 2 large eggs, beaten
  • 2 green onions, chopped
  • 1 cup protein (chicken, shrimp, or tofu)

Instructions

  1. Preheat your Blackstone griddle over medium-high heat.
  2. Add vegetable oil and sauté minced garlic and diced onions until fragrant (about 2 minutes).
  3. Toss in the mixed vegetables and stir-fry until tender-crisp (about 3-4 minutes).
  4. Add the cooked rice and soy sauce; mix thoroughly to coat each grain.
