  • 1 lb ground beef (80/20)
  • 1 cup sharp cheddar cheese (shredded)
  • 3 large eggs
  • ½ cup heavy cream
  • 1 cup pork rind crumbs
  • ½ cup dill pickles (sliced or chopped)
  • 2 tbsp sugar-free mustard
  • 2 tbsp sugar-free ketchup
  • 1 tsp garlic powder
  • 1 tsp onion powder

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×13 inch baking dish.
  2. In a skillet over medium heat, brown the ground beef until no longer pink; drain excess fat.
  3. Stir in mustard, ketchup, garlic powder, onion powder, and pork rinds until well combined.
  4. In a separate bowl, whisk eggs and heavy cream together. Pour over the beef mixture.
  5. Layer half of the beef mix in the baking dish, top with half the cheese and dill pickles. Repeat layers.
  6. Bake for about 30 minutes or until golden and bubbly.
