- 1 lb ground beef (80/20)
- 1 cup sharp cheddar cheese (shredded)
- 3 large eggs
- ½ cup heavy cream
- 1 cup pork rind crumbs
- ½ cup dill pickles (sliced or chopped)
- 2 tbsp sugar-free mustard
- 2 tbsp sugar-free ketchup
- 1 tsp garlic powder
- 1 tsp onion powder
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9×13 inch baking dish.
- In a skillet over medium heat, brown the ground beef until no longer pink; drain excess fat.
- Stir in mustard, ketchup, garlic powder, onion powder, and pork rinds until well combined.
- In a separate bowl, whisk eggs and heavy cream together. Pour over the beef mixture.
- Layer half of the beef mix in the baking dish, top with half the cheese and dill pickles. Repeat layers.
- Bake for about 30 minutes or until golden and bubbly.
