- 1.5 lbs bone-in chicken thighs
- 2 cups carrots, chopped
- 1 cup celery, chopped
- 1 large onion, diced
- 3 cloves garlic, minced
- 4 cups low-sodium chicken broth
- 2 tsp dried thyme
- 2 bay leaves
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Chop all vegetables into uniform pieces.
- Heat olive oil in a large pot over medium-high heat. Add seasoned chicken thighs skin-side down. Cook for 5-7 minutes until golden brown; flip and cook for an additional 5 minutes. Remove from pot.
- In the same pot, add onions, carrots, and celery. Sauté for about 3-4 minutes until onions are translucent.
- Stir in minced garlic, thyme, and bay leaves; sauté for about 1 minute until fragrant.
- Return seared chicken to the pot. Pour in enough broth to cover ingredients comfortably. Bring to a boil, then reduce heat to simmer gently.
- Simmer uncovered for 30-40 minutes until chicken is tender and flavors meld.
