Ingredients

  • 1.5 lbs bone-in chicken thighs
  • 2 cups carrots, chopped
  • 1 cup celery, chopped
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 2 tsp dried thyme
  • 2 bay leaves
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Chop all vegetables into uniform pieces.
  2. Heat olive oil in a large pot over medium-high heat. Add seasoned chicken thighs skin-side down. Cook for 5-7 minutes until golden brown; flip and cook for an additional 5 minutes. Remove from pot.
  3. In the same pot, add onions, carrots, and celery. Sauté for about 3-4 minutes until onions are translucent.
  4. Stir in minced garlic, thyme, and bay leaves; sauté for about 1 minute until fragrant.
  5. Return seared chicken to the pot. Pour in enough broth to cover ingredients comfortably. Bring to a boil, then reduce heat to simmer gently.
  6. Simmer uncovered for 30-40 minutes until chicken is tender and flavors meld.
