Ingredients

  • 2 cans (15 oz each) canned sweet corn, drained
  • 8 oz cream cheese, softened
  • 1 cup sour cream
  • 1 cup shredded sharp cheddar cheese
  • 4 tbsp unsalted butter, divided
  • 1 cup seasoned breadcrumbs
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • Chopped green onions (optional, for garnish)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a baking dish with nonstick spray.
  2. In a large bowl, melt 2 tablespoons of butter and mix with softened cream cheese until smooth. Blend in sour cream.
  3. Stir in drained corn, garlic powder, salt, and pepper until well combined.
  4. Fold in shredded cheddar cheese until evenly distributed.
  5. Transfer the mixture to the greased baking dish and spread evenly.
  6. Mix remaining melted butter with breadcrumbs and sprinkle over the top.
  7. Bake for 30 minutes or until golden brown and bubbly.
