- 12 ounces of spaghetti
- 1 tablespoon olive oil
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 bell pepper, diced
- 1 can (14.5 ounces) diced tomatoes
- 4 cups vegetable broth or chicken broth
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Add chopped onion and cook until translucent (about 5 minutes). Stir in minced garlic and diced bell pepper; cook for another 3 minutes.
- Add spaghetti, diced tomatoes with juice, broth, oregano, basil, salt, and pepper. Bring to a boil.
- Reduce heat to low, cover the pot, and simmer for 10 to 12 minutes or until pasta is al dente. Stir occasionally to prevent sticking; add more broth if needed.
- Remove from heat and let sit for a few minutes before serving.
