  • 1 cup quinoa
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 2 cups fresh spinach
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 avocado, sliced
  • 3 tbsp tahini
  • 1 tbsp chipotle paste
  • Juice of 1/2 lemon
  • 2 tbsp olive oil
  • Salt & pepper to taste

Instructions

  1. Rinse quinoa under cold water. In a saucepan, combine with 2 cups water. Bring to a boil, then reduce heat to low and cover for about 15 minutes until fluffy.
  2. Preheat oven to 400°F (200°C). Toss chickpeas with olive oil, salt, and pepper on a baking sheet. Roast for 20–25 minutes until golden.
  3. In a bowl, whisk together tahini, chipotle paste, lemon juice, and salt. Add water gradually for desired consistency.
  4. Slice tomatoes and cucumber; tear spinach into smaller pieces.
  5. Layer cooked quinoa at the base, top with roasted chickpeas and fresh veggies. Drizzle with sauce and enjoy!
