- 1 can (15 oz) chickpeas, drained and rinsed

- 1 cup cherry tomatoes, halved

- 1 tbsp chipotle paste
- Juice of 1/2 lemon
- 2 tbsp olive oil
- Salt & pepper to taste
Instructions
- Rinse quinoa under cold water. In a saucepan, combine with 2 cups water. Bring to a boil, then reduce heat to low and cover for about 15 minutes until fluffy.
- Preheat oven to 400°F (200°C). Toss chickpeas with olive oil, salt, and pepper on a baking sheet. Roast for 20–25 minutes until golden.
- In a bowl, whisk together tahini, chipotle paste, lemon juice, and salt. Add water gradually for desired consistency.
- Slice tomatoes and cucumber; tear spinach into smaller pieces.
