  • 34 lbs chuck roast
  • 4 medium carrots, chopped
  • 2 lbs Yukon Gold potatoes, quartered
  • 2 large yellow onions, thickly sliced
  • 4 cups low-sodium beef broth
  • 4 cloves garlic, crushed
  • 2 sprigs fresh thyme
  • 2 sprigs fresh rosemary
  • Salt and pepper to taste

Instructions

  1. Preheat your Dutch oven over medium-high heat. Season chuck roast generously with salt and pepper.
  2. Sear the roast until golden brown on all sides, then remove from pot.
  3. Add onions and garlic; sauté until fragrant (about 2 minutes). Then add carrots and potatoes.
  4. Deglaze with a splash of beef broth, scraping up any browned bits.
  5. Return the roast to the pot along with any collected juices.
  6. Pour in remaining broth and add thyme and rosemary.
  7. Cover and cook in a preheated oven at 325°F (163°C) for about 3 hours or until fork-tender.
