- 1 cup broccoli florets
- 1 cup carrots, thinly sliced
- 1/2 cup teriyaki sauce
- 2 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 2 green onions, chopped (for garnish)
- 2 tbsp sesame oil (divided)
- Cooked rice or noodles (for serving)
Instructions
- Prep all vegetables by washing and chopping them into bite-sized pieces.
- Heat 1 tablespoon of sesame oil in a large skillet over medium-high heat.
- Add shrimp to the pan; cook until pink and opaque (about 3-4 minutes). Remove from the pan.
- In the same skillet, add another tablespoon of sesame oil if needed, then sauté garlic, ginger, bell peppers, broccoli, and carrots for about 5 minutes until tender-crisp.
- Return shrimp to the pan; pour in teriyaki sauce and heat everything together for another 2–3 minutes.
- Serve hot over cooked rice or noodles; garnish with chopped green onions.
