Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
 - In one bowl, place flour; in another, beat eggs; and in a third, mix panko breadcrumbs with salt and pepper.
 - Dredge each piece of chicken in flour, dip into beaten eggs, then coat thoroughly with panko breadcrumbs.
 - Arrange the breaded nuggets on the baking sheet and lightly spray with cooking spray.
 - Bake for 15-20 minutes or until golden brown and cooked through.
