Pumpkin Ricotta Pancakes

  • Author: Emma Taylor
  • Total Time: 30 minutes
  • Yield: About 12-15 pancakes 1x

Description

Fluffy pancakes made with pumpkin puree, creamy ricotta, and warm spices, cooked on a griddle until golden.

Ingredients

Scale
  • 2 cups (250g) all-purpose flour
  • 1/4 cup (50g) granulated sugar
  • 2 tsp ground cinnamon
  • 1 tsp baking powder
  • 1 tsp kosher salt
  • 1/2 tsp baking soda
  • 1/4 tsp ground nutmeg
  • 1 cup (240g) pumpkin puree
  • 1 cup (240g) whole milk ricotta cheese
  • 2 large eggs, lightly beaten
  • 1 1/2 cups (360ml) whole milk
  • 4 tbsp (57g) unsalted butter, melted, plus more for the griddle

Instructions

  1. In a large bowl, whisk together the all-purpose flour, sugar, cinnamon, baking powder, salt, baking soda, and nutmeg.
  2. In a separate medium bowl, combine the pumpkin puree, ricotta cheese, beaten eggs, milk, and melted butter. Whisk until smooth.
  3. Pour the wet ingredients into the dry ingredients. Use a spatula to fold them together until just combined. Do not overmix; the batter should have some small lumps.
  4. Heat a large nonstick skillet or a griddle over medium heat. Brush the surface lightly with melted butter or use cooking spray.
  5. Pour about 1/4 cup of batter for each pancake onto the hot griddle. Cook for 2-3 minutes, or until bubbles appear on the surface and the edges look set.
  6. Flip the pancakes carefully and cook for another 1-2 minutes on the other side, until golden brown and cooked through.
  7. Transfer the cooked pancakes to a plate. Keep them warm while you repeat the process with the remaining batter, adding more butter to the griddle as needed.
  8. Serve the pancakes immediately.

Notes

  • For the lightest pancakes, be careful not to overmix the batter. Stir just until the flour streaks disappear. A lumpy batter is what you want.
  • Be sure to use 100% pure pumpkin puree, not pumpkin pie filling, which contains added sugar and spices.
  • To keep pancakes warm while you cook the whole batch, place them on a baking sheet in a single layer in an oven set to 200°F (95°C).
  • Whole milk ricotta provides the best texture, but part-skim ricotta will also work if that’s what you have.
