Roasted Squash Hummus Wraps

  • Author: Emma Taylor
  • Total Time: 40 minutes
  • Yield: 4 servings 1x

Description

Warm roasted butternut squash, creamy hummus, and fresh greens are rolled into a soft tortilla for a satisfying meal.

Ingredients

Scale
  • 1 small butternut squash (about 2 lbs / 900g), peeled, seeded, and cut into ½-inch cubes
  • 2 tbsp olive oil
  • 1 tsp ground cumin
  • ½ tsp paprika
  • ½ tsp salt
  • ¼ tsp black pepper
  • 4 large (10-inch) flour or whole wheat tortillas
  • 1 cup hummus
  • 2 cups fresh baby spinach
  • ½ cup crumbled feta cheese

Instructions

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper.
  2. In a large bowl, toss the butternut squash cubes with olive oil, cumin, paprika, salt, and pepper until evenly coated.
  3. Spread the seasoned squash in a single layer on the prepared baking sheet.
  4. Roast for 20-25 minutes, or until the squash is tender when pierced with a fork and lightly browned at the edges. Toss halfway through cooking.
  5. While the squash is finishing, warm the tortillas. You can wrap them in a damp paper towel and microwave for 30 seconds or warm them one at a time in a dry skillet over medium heat for 15-20 seconds per side.
  6. To assemble, lay a warm tortilla on a flat surface. Spread about ¼ cup of hummus over the tortilla, leaving a small border around the edges.
  7. Arrange a layer of baby spinach over the hummus. Top with about a quarter of the roasted squash and a sprinkle of feta cheese.
  8. Fold in the sides of the tortilla, then tightly roll it from the bottom up to enclose the fillings.
  9. Serve the wraps immediately, either whole or sliced in half on a diagonal.

Notes

  • For easier assembly, do not overfill the wraps. Leaving a border around the edge helps keep the fillings contained.
  • To make this recipe vegan, simply omit the feta cheese or substitute it with a plant-based alternative.
  • You can roast the squash up to 3 days in advance. Store it in an airtight container in the refrigerator and gently reheat before assembling the wraps.
  • Pumpkin seeds or toasted pecans would make a nice, crunchy addition.
