- 2 tbsp taco seasoning
- 1 tsp smoked paprika
- 1 can (14.5 oz) diced tomatoes
- 1 cup beef broth
- 1/4 cup chopped fresh cilantro
- 8 thick flour tortillas
- 2 cups shredded Oaxaca or mozzarella cheese
Instructions
- Preheat the smoker to 225°F (107°C).
- Season the chuck roast with taco seasoning and smoked paprika.
- Sear the roast for 3-4 minutes on each side until browned.
- In a pot, combine diced tomatoes and beef broth, then add the roast.
- Cover and slow-cook for 4 hours or until fork-tender.
- Shred the meat using two forks. Warm tortillas in a skillet, fill with meat and cheese, then fold.
