Baked Half Chicken in the Oven

Roasting a whole bird takes time, but splitting it in half speeds up the process. This baked half chicken oven method delivers a classic dinner with less waiting. The meat stays tender while the skin crisps up in the heat.

Jump to:

You only need a few pantry staples to season the chicken. Butter goes under the skin to keep the breast and legs moist. The entire dish takes about 10 minutes to prepare and 50 minutes to bake.

Why You'll Love This Recipe

  • Placing butter directly under the skin keeps the lean breast meat from drying out in the oven
  • Starting the oven at a higher temperature helps render the fat, while lowering it later ensures the meat cooks through evenly
  • Basting the chicken halfway through the cooking time redistributes the pan juices over the meat

Essential Ingredients

  • Chicken: You can buy a whole bird and cut it yourself or ask the butcher to halve it for you. Pre-cut chicken halves work well and save prep time.
  • Unsalted butter: Softened butter is easier to slide under the chicken skin without tearing it. If using salted butter, reduce the added kosher salt slightly.
  • Olive oil: The oil coats the outside of the skin to help the spices stick and promote browning.
  • Dried thyme: This adds a classic savory flavor. You can swap it for dried rosemary or an Italian seasoning blend.
  • Garlic powder: Use powder rather than fresh minced garlic, as fresh garlic can burn during the roasting process.

Let’s Make it together

Prepare the chicken: If starting with a whole chicken, use kitchen shears to remove the backbone and cut the bird into two halves. Pat the chicken dry with paper towels. Removing excess moisture from the skin helps it brown in the oven.

Add the butter and seasonings: Gently loosen the skin over the breast and leg areas with your fingers. Push the softened butter underneath the skin and press it into an even layer. Rub the outside of the chicken with olive oil, then sprinkle on the salt, pepper, garlic powder, and dried thyme.

Bake and baste: Place the chicken on a baking sheet and roast at 400 degrees Fahrenheit (200 degrees Celsius) for 20 minutes. Lower the heat, baste the chicken with the juices in the pan, and continue baking. The chicken is done when a meat thermometer reads 165 degrees Fahrenheit (74 degrees Celsius).

You Must Know

  • Always use a meat thermometer to verify doneness
  • Poultry must reach a safe internal temperature of 165°F (74°C)
  • Save the removed backbone in a freezer bag to make chicken broth later
  • If the skin is browning too quickly during the second half of baking, tent the chicken loosely with aluminum foil

Serving Ideas

Serve this chicken with roasted root vegetables, mashed potatoes, or a crisp green salad dressed with vinaigrette.

Storing & Reheating

Store leftover chicken in an airtight container in the refrigerator for up to 4 days. You can freeze the cooked meat for up to 3 months. Reheat in a 350°F (175°C) oven until warmed through, or use a microwave on medium power.

FAQ

Can I use bone-in chicken breasts instead of a halved whole chicken?

Yes, you can use bone-in, skin-on chicken breasts. They will require less cooking time, so start checking the internal temperature after 35 to 40 minutes total.

Do I need a roasting rack for this recipe?

A roasting rack is optional. Placing the chicken directly on the baking sheet allows it to cook in its own juices, which keeps the meat moist.

How do I know when the chicken is done without a thermometer?

A meat thermometer is the only reliable way to check for safety. The juices should also run clear when you pierce the thickest part of the thigh with a knife.

Baked Half Chicken in the Oven

  • Author: Emma Taylor
  • Total Time: 70 minutes
  • Yield: 4 servings 1x

Description

Two chicken halves are rubbed with butter and herbs before roasting in the oven until tender.

Ingredients

Scale
  • 1 whole chicken (4 pounds / 1.8 kg) or 2 chicken halves (2 pounds / 900 g each)
  • 4 tablespoons (56 g) unsalted butter, softened
  • 2 tablespoons (30 ml) olive oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1 teaspoon dried thyme

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. If using a whole chicken, place it breast side down on a cutting board. Use kitchen shears to cut along both sides of the backbone to remove it. Flip the chicken over, press down on the breastbone to break it, and cut the bird completely in half.
  3. Place the chicken halves on a baking sheet or in a roasting pan. Pat the skin dry with paper towels.
  4. Carefully loosen the skin around the breast and leg of each half. Slide 1 tablespoon (14 g) of softened butter under the skin of each breast and 1 tablespoon (14 g) under the skin of each leg, pressing gently to flatten it.
  5. Rub the outside of the chicken halves with the olive oil. Season evenly with the kosher salt, black pepper, garlic powder, and dried thyme.
  6. Bake in the preheated oven for 20 minutes.
  7. Remove the pan from the oven and baste the chicken with the melted butter and juices. Lower the oven temperature to 350°F (175°C).
  8. Return the chicken to the oven and bake for another 30 minutes. Check the thickest part of the thigh with a meat thermometer to ensure it reaches a safe internal temperature of 165°F (74°C).
  9. Let the chicken rest for 10 minutes before carving and serving.

Notes

  • Always use a meat thermometer to verify doneness. Poultry must reach a safe internal temperature of 165°F (74°C).
  • Save the removed backbone in a freezer bag to make chicken broth later.
  • If the skin is browning too quickly during the second half of baking, tent the chicken loosely with aluminum foil.
