Desi Chicken

Desi chicken refers to a traditional style of chicken curry made with heritage or free-range birds. These birds have firmer meat that requires a longer, slower simmer than standard grocery store chicken. The result is a deeply flavored dish with a robust, spiced gravy.

Jump to:

The cooking process starts by briefly boiling the chicken to create a quick stock. You then build a rich base using blended onions, tomatoes, and a mix of whole and ground spices. The chicken finishes cooking in this aromatic sauce until it becomes tender.

Why You'll Love This Recipe

  • Boiling the chicken first creates a flavorful homemade stock that forms the base of the gravy
  • Blending the cooked onions and tomatoes creates a smooth, uniform sauce
  • Blooming the whole spices in hot oil releases their essential oils for a deeper flavor profile

Essential Ingredients

  • Desi chicken: Look for heritage, free-range, or stewing hens at local farms or specialty butchers. They have firmer meat and stronger flavor than standard broilers.
  • Onions: Yellow or red onions work well here. Chop them finely so they cook down quickly before blending.
  • Ginger and garlic paste: You can use store-bought pastes or blend fresh ginger and garlic with a splash of water.
  • Black cardamom: This provides a smoky, earthy flavor. Do not substitute with green cardamom, as the flavor profile is very different.
  • Red chili powder: Use Kashmiri chili powder for a milder heat with vibrant color, or standard cayenne for a spicier kick.

Let’s Make it together

Prepare the chicken and stock: Boil the chicken pieces with water and a bit of garlic paste. Remove the chicken and save the liquid to use as your broth.

Make the base: Sauté the onions, ginger, garlic, and tomatoes until soft. Blend this mixture until smooth so your final gravy has an even texture.

Bloom the spices: Heat oil in a large pot and toast the whole spices until fragrant. Add the ground spices and cook briefly to remove their raw flavor.

Simmer the curry: Combine the blended base, spiced oil, chicken, and reserved stock. Simmer everything together until the chicken is completely tender and the sauce thickens.

Serving Ideas

Serve this chicken curry alongside warm naan, roti, or a bowl of steamed basmati rice.

Storing & Reheating

Store leftovers in an airtight container in the refrigerator for up to 4 days. Freeze for up to 3 months. Reheat gently on the stovetop or in the microwave until the chicken is hot and reaches 165°F (74°C).

FAQ

Can I use a regular chicken for this recipe?

Yes, you can use a standard cut-up broiler chicken. You will need to reduce the simmering time significantly since standard chickens cook much faster.

What is a black cardamom pod?

Black cardamom is a large, dark brown spice pod dried over an open fire. It adds a distinct smoky flavor to curries and rice dishes.

How do I store the leftovers?

Keep any leftover chicken and gravy in an airtight container in the refrigerator. The flavors often deepen by the next day.

Description

Bone-in heritage chicken simmers in a spiced tomato and onion gravy until tender.

Ingredients

Scale
  • 2 lbs (900 g) bone-in, skinless desi chicken (heritage or free-range), cut into pieces
  • 6 cups (1.4 L) water
  • 2.5 tbsp garlic paste, divided
  • 1/3 cup plus 2 tbsp (105 ml) neutral oil, divided
  • 3 medium onions, finely chopped
  • 2 tbsp ginger paste
  • 2 medium tomatoes, chopped
  • 3 whole cloves
  • 9 whole black peppercorns
  • 1 black cardamom pod, bruised
  • 1-inch cinnamon stick
  • 3/4 tsp cumin seeds
  • 1 tsp salt
  • 3/4 tsp red chili powder
  • 1/4 tsp turmeric
  • 1 1/4 tsp coriander powder
  • 1/4 tsp ground nutmeg
  • Pinch of nigella seeds (kalonji)
  • Fresh cilantro, chopped (for garnish)
  • Green chilies, sliced (for garnish)

Instructions

  1. Place the chicken pieces, water, and 1/2 tablespoon of garlic paste in a large pot. Bring to a boil, then lower the heat and simmer for 5 minutes. Remove the chicken and set the remaining stock aside.
  2. Heat 1/3 cup (80 ml) of oil in a skillet over medium heat. Add the chopped onions and cook until light golden brown.
  3. Stir in the ginger paste and the remaining 2 tablespoons of garlic paste. Cook until the raw smell fades and the oil separates, then add the tomatoes and cook until soft.
  4. Transfer the onion and tomato mixture to a blender, leaving as much oil in the pan as possible. Blend until smooth.
  5. In a large clean pot, heat the remaining 2 tablespoons of oil over medium heat. Add the cloves, peppercorns, black cardamom, cinnamon stick, and cumin seeds. Let them cook until the cumin seeds begin to crackle.
  6. Stir in the salt, red chili powder, and turmeric. Cook briefly until the raw turmeric smell fades, being careful not to burn the spices. Add the coriander powder, nutmeg, and nigella seeds, stirring to combine.
  7. Pour the blended onion mixture into the pot. Cook until the oil begins to separate from the gravy. Add the boiled chicken pieces and cook for 5 to 10 minutes.
  8. Pour in the reserved chicken stock. Bring the mixture to a boil, cover, and simmer until the chicken is tender and reaches a safe internal temperature of 165°F (74°C).
  9. Uncover and boil the gravy until it reaches your preferred thickness. Garnish with chopped cilantro and sliced green chilies before serving.
