Chicken Apple Sausage Hash

  • Author: Emma Taylor
  • Total Time: 30 minutes
  • Yield: 4 servings 1x

Description

A savory and sweet hash with sliced chicken sausage, Brussels sprouts, and tart apple, all cooked together in one skillet.

Ingredients

Scale
  • 2 tbsp (30 ml) vegetable oil
  • 1/2 cup (75 g) chopped yellow onion
  • 4 fully cooked chicken apple sausages (about 12 oz / 340 g), sliced 1/4-inch thick
  • 1 1/2 cups (150 g) thinly sliced Brussels sprouts
  • 1 large tart apple, peeled, cored, and chopped
  • 1 tsp (2 g) caraway seeds
  • 1/4 tsp (1.5 g) salt
  • 1/8 tsp black pepper
  • 2 tbsp (15 g) chopped walnuts
  • 1 tbsp (12 g) brown sugar
  • 1 tbsp (15 g) whole grain mustard
  • 1 tbsp (15 ml) apple cider vinegar

Instructions

  1. Heat the oil in a large skillet over medium-high heat. Add the onion and cook, stirring often, until softened, about 2 minutes.
  2. Add the sliced sausage to the skillet. Cook for 3 to 4 minutes, stirring occasionally, until the sausage begins to brown.
  3. Stir in the Brussels sprouts, chopped apple, caraway seeds, salt, and pepper. Continue to cook, stirring every few minutes, until the sprouts are tender and the ingredients are lightly browned, about 6 to 8 minutes.
  4. Add the walnuts, brown sugar, whole grain mustard, and cider vinegar to the skillet. Stir everything together to coat.
  5. Cook for 1 to 2 more minutes until the sauce has thickened slightly and glazed the hash ingredients.
  6. Serve the hash warm. Ensure the sausage is heated through to an internal temperature of 165°F (74°C).

Notes

  • Food Safety: The chicken sausage is pre-cooked, but it must be reheated to a safe internal temperature of 165°F (74°C). Use a food thermometer to check.
  • Serving Suggestion: For a richer meal, top each serving with a fried or poached egg. The runny yolk mixes nicely with the hash.
  • Apple Choice: Use a firm, crisp apple like Granny Smith, Honeycrisp, or Braeburn that will hold its shape during cooking.
  • Pan Size: Use a large skillet (12-inch is good) to avoid overcrowding the pan, which helps the ingredients brown rather than steam.
