This dish comes together with about 20 minutes of prep time and roasts in under an hour, making it a great option for a weekend dinner or a small holiday gathering. The combination of rosemary, thyme, and lemon gives the hens a classic, savory flavor.

Why You'll Love This Recipe

 • High-heat roasting ensures the skin gets golden and crisp while keeping the meat inside moist. A compound butter made with fresh herbs and garlic infuses the hens with flavor as they cook. Resting the hens after roasting is key
 • It allows the juices to settle back into the meat, resulting in a more tender and flavorful bird

Essential Ingredients

 • Cornish Hens: Look for these small chickens in the poultry or freezer section of your grocery store. If frozen, be sure to thaw them completely in the refrigerator before using.
 • Fresh Herbs: Fresh rosemary and thyme provide the best flavor. You can use dried herbs in a pinch, but use about one-third the amount.
 • Salted Butter: Using salted butter adds a base layer of seasoning. If you use unsalted butter, add an extra 1/4 teaspoon of salt to the herb mixture.
 • Lemons: A fresh lemon inside the cavity adds moisture and a bright, citrusy aroma to the meat as it roasts.

Let’s Make it together

Prepare the Herb Butter and Hens: First, preheat your oven to 450°F (230°C). While it heats up, mix your softened butter with the chopped fresh rosemary, thyme, and minced garlic in a small bowl. Pat the Cornish hens very dry with paper towels, which is the secret to crispy skin.

Season and Stuff the Hens: Stuff the cavity of each hen with a lemon wedge and a sprig of fresh rosemary. Next, generously rub the garlic herb butter all over the skin of each hen. Get it on the breasts, legs, and wings for maximum flavor.

Roast and Rest: Place the buttered hens in a roasting pan and season them with salt and pepper. Roast for 40-45 minutes. The hens are done when the skin is deep golden brown and a meat thermometer shows 165°F (74°C) in the thigh. Let them rest for about 15 minutes before serving to ensure they are juicy.

You Must Know

 • Food Safety: For poultry, the safe internal temperature is 165°F (74°C)
 • Always check with a meat thermometer in the thickest part of the thigh, avoiding bone
 • Make sure the butter is very soft so it’s easy to spread evenly over the skin
 • Patting the hens dry is an important step to help the skin get crisp and golden

Serving Ideas

Serve these hens with simple sides like roasted potatoes, green beans, or a simple side salad. One hen makes a generous single serving.

Storing & Reheating

Store leftover hens in an airtight container in the refrigerator for up to 3 days. Reheat in a 350°F (175°C) oven until warmed through to help crisp the skin up again.

FAQ

Can I prepare these ahead of time?

Yes, you can prepare the herb butter and rub it on the hens up to 24 hours in advance. Store them covered in the refrigerator and let them sit at room temperature for about 30 minutes before roasting.

What is a Cornish hen?

A Cornish hen, or Cornish game hen, is a specific breed of young chicken. They are small, typically weighing between 1 and 2 pounds, which makes them ideal for a single serving.

Do I need to truss the hens?

Trussing (tying the legs together) can help the hen cook a little more evenly, but it’s not necessary for this recipe. They will cook just fine without it.

Herb Roasted Cornish Hens

 • Author: Emma Taylor
 • Total Time: 80 minutes
 • Yield: 4 servings 1x

Description

Tender Cornish hens roasted with a fragrant herb butter made with rosemary, thyme, and garlic.

Ingredients

Scale
 • 4 Cornish game hens (about 1 to 1.5 lbs / 450 to 680g each)
 • 6 tbsp (85g) salted butter, softened
 • 2 tbsp finely chopped fresh rosemary
 • 2 tbsp fresh thyme leaves
 • 6 cloves garlic, minced
 • 2 lemons
 • 4 sprigs fresh rosemary
 • 1/2 tsp kosher salt
 • 1/4 tsp black pepper

Instructions

 1. Preheat your oven to 450°F (230°C). Pat the Cornish hens completely dry with paper towels.
 2. In a small bowl, combine the softened butter, chopped rosemary, thyme leaves, and minced garlic. Mix well until everything is evenly distributed.
 3. Cut one lemon into four wedges. Place one lemon wedge and one rosemary sprig inside the cavity of each hen.
 4. Carefully rub the herb butter all over the outside of each hen, covering the breast, legs, and wings.
 5. Arrange the hens breast-side up in a large roasting pan or baking dish. Season generously with salt and pepper.
 6. Roast for 40 to 45 minutes, or until the skin is golden brown and an instant-read thermometer inserted into the thickest part of the thigh reads 165°F (74°C).
 7. Remove the hens from the oven and let them rest on a cutting board for 10 to 15 minutes. This allows the juices to redistribute.
 8. Cut the remaining lemon into wedges for serving alongside the hens.
